Growing up, I looked up to my grandfather. He was my best friend, my hero. In July of 2006, he passed away, and my world came crashing down. I wanted to get a tattoo to symbolize him without getting his name or a typical "RIP". Instead, I got four bronze stars on the top of my foot. Now he is with me every step I take.

Before my best friend was sent to Iraq in the Marine Corps we decided to get tattoos. I did not want one but was talked into getting a small flower on my back and I am glad I did. He passed away September 12, 2008. He had been home for two days. After visiting with him and our friends we said "goodbye" and gave a hug, not knowing I would never see him again. He was killed in a car accident on the way home. That tattoo now means so much to me. Now I want to add angel wings on to it. A part of him will always be with me. That's what my tattoo means to me.

A Message to long lost buddies...

I'm Lance Corporal, George A. Reed, and would like to find a couole of good buddies, Steven Thompson and Steven Durkey, who helped me get out of Vietnam. We had served together in the Quang Tri Province between 1969 - 1970. And I would like to thank them and talk to them as I am very ill. They were from Tennessee and are approximately 59-60 years old. We were in the 1st/7Marines/1st Division (Delta).

Boscov's Operation Stay Connected Video

This past Saturday, November 8, 2008 Boscov's, 6abc, the USO, and Lockheed Martin got together for the first ever Operation Stay Connected.

Customers at the Plymouth Meeting Mall video taped messages which will be sent to our troops serving overseas. They could decorate greeting cards which will also be sent to the troops in time for the holidays. In addition customers purchased items for our men and women overseas by using the "Soldier Wish List" that was supplied by Boscov's.

The day was enjoyed by all including Eagles wide receiver, Hank Basket who comes from a military family and shared a special message of thanks to the troops.

Hair in the City raises funds for the Breast Cancer Research Foundation

Boscov's East Presents "Hair in the City"

On Sunday, October 19, 2008, Boscov’s Beauty Center organized a fabulous Hair Show for 2008 called “Hair in the City”.

This year’s show featured all of the latest hair trends for 2009 that were created by our very own wonderful and talented hair stylists. As part of the show, Boscov’s Beauty Center added a special hair makeover for a Breast Cancer Survivor named Joanne. During the show, Joanne’s battle and triumph with Breast Cancer was shared with the audience. As the story finished, Joanne took the runway with not only a new attitude, but with a whole new look.

100% of proceeds from “Hair in the City” will benefit the Breast Cancer Research Foundation. A special “Thank You!” to the Boscov’s Hair Stylists, models, and Wella and Schoeneman who donated hair products to the event. With everyone’s help and support we will win the fight against breast cancer.

Dress for Success with Junior Achievement

On Friday, October 17 the Junior Achievement of Berks County held the third annual Young Women's Futures Symposium at Alvernia University. Among many other wonderful sessions, Boscov's presented over 120 high school women with a fashion showcase to show young women how to dress appropriately for an interview, day to day careerwear, and dressing for a night out on the town.

Fall Fun!

This past weekend I headed to Pittsburgh for a family gathering. I was looking forward to seeing everyone but dreaded driving the 4 1/2 hour drive each way by myself. All that changed the minute I hit the PA Turnpike and saw one of my all time favorite scenes... the beautiful rolling hills and majestic mountains along the turnpike were covered in the most vivid reds, purples, and oranges, that I have ever seen. The beauty found in nature far surpasses any other. The dreaded drive ended up being a highlight of my trip.

This coming weekend should be just as beautiful as the last, mild temperatures and sunny skies will make the perfect setting for some serious Fall Fun! Take advantage of the most beautiful time of year by spending time with your family decorating the house, baking, and visiting your local farm or orchard. Stock up on pumpkins, gourds, corn stalks, hay, and cider. Don't forget to stop by your local Boscov's store location for your home accessories, bakeware, and more!

What a nice way to end the week...

I thought this would be a nice way to end a rainy Friday afternoon...

I had arthroscopic knee surgery in June that went so wrong resulting in my being sick for two months. Our daughter was getting married in September. I couldn't get out to look for a dress.I might have gone the usual route and gone to a Bridal Shop to look for a dress, but time was not on my side! By the time I was able to walk again and feel better, it was the end of August!

My sister-in-law suggested your store as she has always had good luck in finding dresses there and some friends bought their dresses for weddings there. The Bride to be, my mother and I went to your Albany, NY store. Both my mother and I found dresses for the wedding there! Not only were the store personnel sweet and understanding, they were very helpful!

I told my mother-in-law and sister-in-law about your store and our good fortune, so they too went to look for dresses. To their delight, they too were able to find dresses to wear to the wedding! We all looked beautiful!!

Thank you for having a store that to us is FAR and AWAY better than anything else!! Will be shopping there all the time!

So Much Going On!

Tisk, tisk... it has been two weeks since I've written a blog entry. Things have just been so busy here at Boscov's as we gear up for VIP Day on September 27, Campus of Courses in many stores from September 15 through October 14, Friends Helping Friends on October 7, and the Halloween Candy Exchange at the end of October. On top of all that, on Tuesday evening we had the ribbon cutting ceremony for Just 4 Knights which was phenomenal!

I also filmed a new Clinique skincare and Fall Makeup entry which I will edit today and have up by Monday... I promise! This video reinforces the importance of Clinique's signature three-step skin care routine as well as shows you the trend for eyes this fall. (Think rich hues and opaque shadows.)

Now... back to all of the events! Coming up in just about two weeks will be Boscov's Semi-Annual VIP Day. This time the host store will be our Neshaminy, PA location but there will be tons of excitement in the rest of our stores as well. Not only can you spend the day eating delicious food samples, watch product demonstrations, get great deals, and register to win fabulous prizes... you can also help your community! Boscov's has partnered with the Salvation Army and Adult Rehabilitation Centers in all of our store locations. During VIP Day from 10AM to 5PM there will be representatives from the Salvation Army and Adult Rehabilitation Centers collecting your donations of non-perishable food and gently used household items, small appliances and clothing.

READING EDUCATION FOUNDATION TO UNVEIL EXTREME SCHOOL STORE MAKEOVER

August 27, 2008 (Reading, PA) – On Tuesday, September 9^th, the Reading Education Foundation will unveil Just 4 Knights, the result of an Extreme School Store Makeover at Reading High. The project which began in June involved sixteen students and has generated communitywide support.

The success of this summer was a team effort thanks to many local businesses who generously gave of their expertise, time, resources, and of course a great meal each week!

Fleetwood Industries, located in Leesport, latched onto the project early. In addition to providing store fixtures valued at $25,000, the company donated professional design and installation services to reconfigure the space. Fleetwood also hosted a planning session, took students on a tour of the Fleetwood Fixtures facility, and provided dinner.

“Fleetwood Industries was pleased to provide the Reading High students with a new store design. We enjoyed working with an enthusiastic committee and providing them with an education in retail design, merchandising and marketing. We believe in our community and the educational system, and are proud to support Just 4 Knights.” said Mindy Gehris, President of Fleetwood Industries.

During another planning session hosted by Boscov’s Department Store, Ken Lakin, Chief Executive Officer, discussed merchandising and the retail industry. The team toured Boscov’s East and concluded the evening with a meal provided by Boscov’s Ala Carte Catering.

“Maralyn Lakin was so impressed with the project,” said Anna Kaye, Executive Director of the Reading Education Foundation, “that she loaned us one of her star employees, Public Relations and Special Events Coordinator, Rebecca Fried, who provided invaluable information about putting a retail business together. Without Rebecca’s help the project wouldn’t have been possible."

"Boscov's is pleased to be involved in the Reading Education Foundation's school store project. We have and always will continue our tradition of giving back to the communities we serve. Supporting an innovative program such as this is our way of thanking the community in which we began and from whom we have received so much.” said Maralyn Lakin.

“These students are the future. When community leaders facilitate opportunities for them to excel, we all reap the benefits. This program allows students at Reading High School to operate a real business. They will continue to practice core principles such as teamwork, responsibility, and dedication as well as enjoy the resulting sense of accomplishment. The more opportunities students in our community have, the stronger our community will be.” adds Boscov’s, Rebecca Fried.

The Sovereign Center also hosted a planning session. Students went on a “behind the scenes” tour, followed by dinner in the locker room provided by Savor-Reading Catering by SMG where Gordon Kaye, General Manager of the Reading Royals, led an engaging brainstorming discussion about out-of-the-box thinking and marketing strategies.

Interior Images, Wyomissing, painted the space, refurbished existing furniture and helped with visual merchandising. Canal Street Pub and The Peanut Bar hosted meetings and generously provided delicious meals to the planning team. Design and printing of the grand opening event invitations were donated compliments of Keystone Printing, Wyomissing.

In addition, Santo Napoli, the owner of The Archive, a new clothing store at the corner of Fifth and Penn Streets in Reading, provided students with an overview of his experience in the retail industry.

The School Store program is certified to receive Education Improvement Tax Credit contributions. “Thanks to National Penn Bank, Sovereign Bank and Giant Foods, we were able to develop a business curriculum that will be used for students to gain business skills that will serve them well in years to come,” said Anna Kaye, The Foundation’s Executive Director.

“The school store has been around for decades without a makeover, and was in rough shape.” Anna Kaye said. “When I saw the condition of the space I thought this would be a wonderful way to get students involved in planning, developing and operating a real business. The local business community pitched in to make it a success, and now students, alumni and community members have a fabulous place to buy school spirit apparel and school supplies, all while supporting an important school project. You won’t believe your eyes when you see what a community and sixteen students can do in one space.”

“The goal of the Reading Education Foundation is to connect students in our district with experiences, opportunities and individuals which will support their academic accomplishments and professional aspirations, enhancing the educational and extracurricular environment.” said Anna Kaye, The Foundation’s Executive Director. “The school store project accomplished that goal. Through programs funded by the Foundation, we believe that our students will be more engaged in the academic process, leading to higher graduation rates and improving the prospect for life success.”

This past weekend I was at Boscov's in the Berkshire Mall for our Annual Celebration of Children Event. This is a fabulous day raises funds and awareness for local children's services organizations and provides fun activities for families.

What to wear... to a wedding

In two weeks Matt (my fiance) and I are heading out to Pittsburgh for his best friend's wedding. As the date approaches so does a major decision... What do I wear? Matt is the best man which means I need a Rehearsal Dinner dress as well as a Wedding Day dress. It is going to be mid-August and hot, so that definitely needs to factor into the decision. Below you'll find a few of my options!

Rehearsal Dinner:

This pretty folk art lace and embroidered sundress paired with blue Ashley Cooper etched shell earrings and Bandolino sandals will be perfect for a cool and comfortable rehearsal dinner. The Tommy Hilfiger Madras Clutch is chic and fits lip gloss, camera, phone and my wallet!

Just 4 Knights

Tomorrow will mark the seventh Just 4 Knights: Reading High School Store planning meeting! Up to this point our dedicated team of seventeen students has had wonderful visits to various local businesses and restaurants. In my last entry I talked about Fleetwood Fixtures where we were #1 clients presented with Fleetwood's design proposal for the store. Friday, August 1 Fleetwood will be transforming the Reading High School Store into the new… Just 4 Knights!

Since my last entry we have been keeping busy! Ken Lakin, CEO of Boscov’s Department Stores spent time with us at Boscov's East to point out some important merchandising strategies and techniques. Students walked the floor at Boscov's and studied merchandise presentation. Who knew that you could make modern, cool, fresh fixtures out of some fishing line and a few binder clips? Following the walk through students discussed the apparel that will be sold in the store. Baseball caps, sweats, beanies, and tees, are among the meticulously chosen items that will be featured.

This summer has been full of energy, excitement, progress, team work and don’t forget… great food! The Pope Room at Buca di Beppo was our next stop. Everyone enjoyed a delicious meal while Dana Shield, Boscov’s Assistant Buyer in the Shoe Department came along to share her expertise about buying and selling goods. During this meeting the assortment of merchandise for the “School Supply” category was also selected.

Week four brought us to the Sovereign Center where Gordon Kaye, General Manager of the Reading Royals inspired each student to BE AN EVANGELIST. Our team learned that in order to be a success we must all live, breathe, eat and sleep Just 4 Knightsand that everywhere we go and everything we do, we are representing Just 4 Knights. During our tour of the Sovereign Center and our catered meal in the Royals' locker room, in addition to being inspired, we discussed various advertising opportunities and out of the box marketing strategies that Just 4 Knightswill employ. Gordon also made a generous offer to the students… details are in the works but let’s just say there might be a few purple jerseys roaming the halls of Reading High this Fall. Stay tuned for details!

After all of our wonderful hosts we decided we needed a little time to regroup and let everything sink in. No better way than at GNA Pizzeria! The meeting began with a discussion about what would be required of our students in order to work and participate in the school store. Each student will be required to maintain a standard GPA, attendance record and disciplinary record. Once that conversation was complete we talked about a number of other topics. What committees should we form to effectively run the store? What will the store hours be? How many days will the store be open? Should we have an Employee of the Month? Should we have a frequent shopper program? What type of uniforms will workers wear? The open discussions lead to some great solutions.

Tomorrow night we will head downtown once again. The Archive is one of the newest and hippest stores in Reading and we will be spending some time with its owner, Santo Napoli. After that, it’s across the street to the Peanut Bar. Aside from throwing peanut shells on the floor we will spend tomorrow night’s meeting assigning students to the committees that were established last week. Everyone will break into their newly assigned groups and get an action plan together as the Just 4 Knights opening will be here before we know it!

I am working with Rebecca for the week and am creating a blog for the Lancôme sunless tanning demonstration. I found the demonstration very informative because from my own personal experience, creating a sun-kissed look can be anything but easy!

To make sure that you have healthy skin, you should always, always wear sunscreen. The SPF of a sunscreen will only block out UVB rays. However, ninety percent of the damage comes from UVA rays. Lancôme has a product – UV Expert 20 – which contains Mexoryl to help block out the UVA rays. I have tried this product and found it to be very light and not greasy. It is wonderful for sensitive skin.

For those who want to use self-tanner, it is always important to exfoliate first so that the tanner can absorb evenly. Lancôme offers an oil spray, mousse and a gel. Don’t let the oil part of the spray fool you, it dries quickly and won't leave your skin feeling greasy. When applying the spray, it is best to use your palm and not your fingers tips to avoid those dreaded streaks. It is recommended that you apply at night, so that you don’t rush through. I found it very interesting that this product will only bring out the natural melanin in your skin so you will never end up with orange skin!

If you want even more of a sun kissed look, Lancôme offers a Cabana Bronze. They come in six different colors so they are a match for skintone. You can use it with a self-tanner or alone. It is really easy to apply. Put the bronzer on your face in a “W” motion. Then brush over your temples, cheeks and forehead, all the places where the sun would naturally hit your face.

Creating a sun-kissed look for your eyes is just as simple. Start with a light, shimmery color on your lid. Then apply gold above the lashes and under your brows. Blend the colors together. It’s just that quick. I can use it for school or a night on the town.

Relay for Life- Boscov's Buddies at Oxford Valley

The Boscov’s Buddies of Oxford Valley had another successful year supporting the Fairless Hills Relay for Life benefiting the local chapter of the American Cancer Society. Even though we had 94 degree heat we kept 1 member of our team of 24 on the track for 24 hours on Saturday, June 28 and Sunday, June 29. The cause was worth it. The rain and wind pushed the team to work even harder. Sunday morning a rainbow appeared over the stadium. A beautiful reminder of why we were there.

The Pennsbury Relay raised over $74,000. Our team contributed over $2,500. We have worked hard over the past 6 months raising money with support of our co-workers through hot dog, pretzel and taco sales. A new addition this year was a used book sale and recycling aluminum cans in our employee break room. Dress down days were fun. We supported our local sports teams such as the Flyers and Phillies. We are looking forward to a bigger and better year in 09’.

Until we find the cure we will be out there for sure.

Favorite Summer Treats

Whether they are cool and refreshing or full of fresh fruit, some desserts are just meant to be enjoyed in the summer. My favorite summer desserts are Ice Box Cake and my sister Christina's Famous Flag Cake.

What is your favorite Summertime Dessert?
I shared my favorites below... now you share yours!

*Ice Box Cake*

Ingredients:
2 boxes Cook-n-Serve Vanilla Pudding Mix
2 boxes Cook-n-Serve Chocolate Pudding Mix
1 box Graham Crackers

Directions:
1- Line the bottom of a 9x13" glass or ceramic baking dish with one layer of graham crackers.
2- Prepare both boxes of vanilla pudding according to pudding instructions on box.
3- Pour the hot vanilla pudding over the bottom layer of graham crackers. Do this step slowly to avoid moving graham crackers out of place.
4- Cover the vanilla pudding with one layer of graham crackers.
5- Prepare both boxes of chocolate pudding according to pudding instructions on box.
6- Pour hot chocolate pudding over the layer of graham crackers. Do this step slowly to avoid moving graham crackers out of place.
7- Crush 4-6 Graham crackers. Sprinkle over chocolate pudding layer to cover.
8- Refrigerate for 4-6 hours until cake is completely chilled.
9- Serve in 3-4" squares. Enjoy!

*Christina's Famous Flag Cake*

Ingredients:
1 box Yellow Cake Mix
1 box Chocolate Cake Mix
2-3 Bananas 1 box Cook-n-Serve Vanilla Pudding
1 Large Container Cool Whip
3/4 cup Fresh Blueberries (whole)
2 pints Fresh Strawberries (halved)

Directions:
1- Prepare the vanilla pudding according to instructions on box. Set aside to cool.
2- Prepare the chocolate and vanilla cakes according to instructions on box. Bake in 9x13 rectangular cake pans. Set aside to cool.
3- Once cakes are cool, spread vanilla pudding evenly over the vanilla cake, top only. Do not spread pudding on sides of cake.
4- Slice bananas into cylinders and cover vanilla pudding with one layer of bananas.
5- Place the chocolate cake directly on top of the vanilla layer. Make sure the flat side of the cake faces down.
6- Cover entire cake, top and sides with cool whip (you can use homemade whipped cream in place of whipped cream).
7- Wash and dry blueberries. In the top left-hand corner of the cake, create the blue area of the flag by evenly spacing rows of ten blueberries across and approximately 5 rows down.
8- Cut strawberries into halves. Create Red stripes straight across the remaining cake. Leave about 3/4-1" between rows of strawberries.
9- Refrigerate until ready to serve. Enjoy!

To maintain a year-round focus on the importance of United Way, the company established a United Way at Work Committee that has been in place for over 20 years. The committee meets once a month and promotes the work of United Way and the partner agencies by planning special activities throughout the year to benefit local families, seniors, and youth. Annually, the committee’s signature event, with long-time partner Boscov’s Inc., is an activity they call “Take a Friend Fishing”. This year’s event took place on June 20^th. “Take a Friend Fishing” provided a day of fun for over 150 youth (ages 6 through 16) from Olivet Boys & Girls Club. The day featured fishing (of course), crafts, swimming, and lots of food!

Boscov’s transformed a picnic pavilion into a “Think Green” environment that invited Olivet boys and girls to explore their creativity through a variety of arts and crafts and learned some basic tips on how to keep our environment clean. The entire day was filled with exciting events and surprises for the children.

“Take a Friend Fishing” provides a unique experience for the kids because many of them have never been fishing or had the opportunity to play in an expansive outdoor environment. Providing them the chance to alter their normal routine to participate in a positive and enjoyable setting with caring volunteers is what the event is all about. At the end of the day when the busses depart to take the kids home…the volunteers and participants are already looking forward to next year. The volunteers enjoy the day as much as the kids!

MDA Lock-Up

The Muscular Dystrophy Association arrested Shawn Stankiewicz, Boscov’s North Store Manager on Wednesday, June 25^th for having a “big heart” and for caring for those afflicted with Neurological Diseases. Shawn, with the help of fellow Boscov’s employees, family and friends were able to raise bail in the amount of $1,225.00. The full amount went directly to the Muscular Dystrophy Association.

Since 1955, MDA has built bridges and knocked down barriers for youngsters with neuromuscular diseases, by providing an unforgettable week at MDA summer camp. A portion of the funds raised during the MDA Lock-up will help send children with Neurological Diseases to MDA summer camps. The camps offer a wide range of programs for young people ages 6 to 21 who are affected by neuromuscular disease. Campers attend week-long sessions organized by MDA volunteers and staff. Camp activities are geared to the abilities of campers and include fishing, swimming, horseback riding, boating, field hockey and baseball. Less physically demanding activities include arts and crafts, nature study, talent shows, cookouts and entertainment.

The remaining funds collected will be used towards specialized wheelchairs, leg braces, clinical visits, therapy and inoculations. Every dollar goes far in helping children with Neurological Diseases.

I will be the first to admit that I write blog entries geared for the girls more often than those for the guys. For the most part I just find women's fashions exciting, inspiring, and constantly changing... not to mention that I am a girl and therefore can speak on the subject.

That said, there is a young men's line of clothing that I am obsessed with! It is stylish, manly, trendy, comfortable, relaxed and put together all in one affordable package and it is called Company 81. Reading High Extreme School Store Makeover Week 2

A FABULOUS group of Reading High School students are hard at work this summer in order to give their classmates, teachers, friends and family members a new and improved Reading High School Store. The Grand Opening Celebration and ribbon cutting ceremony is scheduled for the start of the 2008-2009 school year.

Every Wednesday night throughout the summer this dedicated and brilliant team will meet in a different location to discuss ideas, implement plans, and figure out how they are going to make this the best school store Reading has ever seen!

The Reading High Extreme School Store Makeover could not be a success without the support of the students, community, families and friends of Reading High. Anna Kaye, Executive Director of the Reading Education Foundation has spearheaded the project and is the driving force behind everything. I, Rebecca Fried, on behalf of Boscov's will be helping out every step of the way... as we do know a little something about retail. Virginia Gantkowski, a Retail and Merchandising teacher at the Reading Muhlenburg Career Technology Center is also on board and will play an important role, as she is in charge of the RMCTC school store and talented group of students who participate and compete in DECA. Also, the many teachers, administration, local business leaders and parents who have already shown such great support. And let's not forget the most important people of all... The Reading High School Store Planning and Development Team who this blog will follow all summer long as they laugh, cry, and try to figure out "What do Reading High students, families, and faculty want?"

At our first meeting two weeks ago the team successfully came up with the school name (top secret for the moment), merchandise categories and assortment.

At last night's weekly meeting, the entire team, Anna, Kate Clewell, of the Reading High School Art Department and myself piled onto a school bus and headed to Fleetwood Fixtures. Fleetwood Fixtures has stepped up to the plate big time! They have given of their time and energy for this project, and are donating state-of-the art fixtures for the school store space. At last night's meeting, Mindy Gehris and Nicole Tourot presented their store design and merchandising recommendations. Their homework assignment... go to a store, any store, and take notice of the way products are presented, merchandised and sold.

Each week I will post pictures and updates on the progress of the school store. Next stop...Boscov's! Ken Lakin, CEO of Boscov's will be joining us to talk about the retail business and help the team select the opening assortment of apparel and accessories merchandise.

For the past two summers I lived in a pair of white canvas Tommy Hilfiger lace up espadrilles. This season I had to face a harsh reality, #1- My favorite Tommy Hilfiger sandals were no longer white and were showing some serious age. #2- There were many new and updated styles out there that I needed to start exploring. You know what they say... "Out with the old and in with the new"... better get shopping!

Here is a list of my top ten favorite shoes and trends for this summer. Hopefully it will help you find some hot kicks for what is sure to be a hot summer!

1- Gladiators have officially taken the throne as Hottest Summer Shoe Style as voted for by, well, me! The Jessica Simpson Caralie sandal in black patent, square toe and goldtone jewels is perfect for a night out while the Madden Girl Sicily in brown leather is casual and perfect for everyday!

2- Tommy Hilfiger's Sabrina is the updated and improved version of my tried and true, since retired white espadrilles. These wedge sandals have a simple ankle tie and are available in brown, plaid and stripe.

Easy Grilled Fish Tacos

Grilled fish tacos are a great way to eat a nutritious spring-time meal. The marinated grilled fish is delicous and is complemented by guacamole, pico de gallo and mango salsa. Add lettuce, tomatoes, sour cream and all the toppings you love!

Ingredients

Marinade

2 tablespoons finely diced white onion
2 tablespoons olive oil
2 tablespoons freshly squeezed lime juice
2 tablespoons freshly squeezed orange juice
1 tablespoon fresh lemon juice
1 tablespoon chopped cilantro
1 teaspoon minced garlic
1/2 teaspoon dried oregano, rubbed to a powder
1/4 teaspoon kosher salt
1 1/2 lbs boneless skinless white fish fillet

Serve with…

Corn tortilla, warmed
Diced avocado or smashed avocado, with lime juice, and salt
Lime wedge
Mango Salsa
Salsa, de Chiles de Arbol or Bottled Hot Sauce
Pico de Gallo

Directions

Combine all marinade ingredients. Cut the fish into several large pieces and add to the marinade.
Refrigerate for 1 to 3 hours (no longer or you'll have ceviche). Drain the fish and discard the marinade.

Half an hour before cooking, clean the grill thoroughly with a brush and wipe it down with an oil-dampened rag. Preheat the grill on high. Grill the fish until it is barely firm to the touch and opaque through the center. Do not overcook.

Remove to a platter and break into chunks to serve. Keep loosely covered.

To serve, hold a tortilla in your hand and add a spoonful of avocado. Add a few pieces of fish, a squeeze of lime, mango salsa; finish with the optional toppings.

Note: The fish may also be baked or sauteed.

Each year Philadelphia University has a fabulous fashion show to showcase the works of their students. Last night I was lucky to have a ticket to the sold out show. Not only was the show amazing... the designs were original, beautiful, artistic and the theme was right up my alley... Eco-Couture!

What is Eco-Couture? There were garments made of organic cottons, sustainable fibers, recycled and re-purposed materials, fruit and vegetable dyes, and the list goes on and on. The two hour show took you on a journey of emotion and geography.

Some students were inspired by beauty, these collections showcased soft colors, bold pattern and fabrics that were soft and flowing as flower petals and fluid like water. Trips to the Oasis, a retreat in Morrocco, garden parties and picnics, a visit in the country, formal affairs, breakdancing in the 80's, and Dancing with the Stars.

Others were inspired by a more harsh reality of America, our ideals and our shortcomings. These collections had hard edges, industrial materials and neutral greys, blacks and browns.

The entire presentation left the audience inspired and in awe. This art was created, executed and presented so perfectly through the use of visuals, and the hand-picked music to enhance each collection. To present such a show and keep up with the rest of their classes is quite a feat and it was done exceptionally well.

The Eco-Couture theme was of course my favorite aspect of the entire show. This show just went to prove that we can be creative, innovative and inspiring without having to sacrifice the health of the planet to do so. The show was a great finale for my own personal Earth Month. It is a great way to be reminded that although we may celebrate Earth Day and Arbor Day in April, our Green efforts must become a part of our lifestyle and the way we live throughout the year.

Boscov’s Buddies are on the move again for 2008! Our “Relay for Life” team will be walking for the American Cancer Society on June 28 and 29, at nearby Pennsbury High School. The team has been busy raising money during the last couple of months. Events such as a bake sale, book sale, raffles, a breakfast for our co-workers, and we are excited to attend a Trenton Thunder baseball game on May 3. Reusable Shopping Bags

Re-usable shopping bags are a great way to reduce your plastic bag waste. They can also be really stylish and more comfortable than carrying the usual paper or plastic. I use re-usable shopping bags and find them much easier to handle... especially going up the stairs to my apartment. The bags have long handles so they are easy to throw over my shoulder to bring into the house. Now I am able to get a full load of groceries into the house in one trip without leaving my hands in pain from all of the plastic bag handles. Re-usable shopping bags are also making their way into shopping malls and retailers nationwide.

To help locate New York City's heritage trees, the City Department of Parks and Recreation conducted a program called the "Great Tree Search." New Yorkers looked for trees of unusual size and age, those linked with historic landmarks, and trees of unusual species or location. On Arbor Day, they held a big party to celebrate New York City's Great Trees.

After a tornado destroyed more than 800 trees in Cardington, Ohio, citizens organized a tree restoration committee which solicited donations and memorials. Volunteers who learned of the tree planting through local newspaper articles appeared on Arbor Day to wrap trunks, water, mulch, and stake 40 large trees which were planted along major streets.

Going Green has added Perks

Since I have begun my efforts to Go Green I have found a few unexpected perks that come along with this endeavour.

Go Green & Save Green
Since I have been making a conscious effort to conserve energy, I have found my home heating and electric bills have been drastically reduced! Before I paid attention to how high my heat was and how many TVs, lights, and unused appliances were plugged in and turned on, my average gas and electric bills for my 2,000 square foot apartment combined for an average total of $200 per month. Since I have changed my habits and those of my fiance, my bills have combined for a total of approximately $70 per month! That is a savings of 35%, and about $1,500 per year!

In order to see this drastic reduction in expenses, we have done a few basic things. By lowering our heat, our gas bill has been greatly reduced. Wearing an extra sweatshirt or snuggling under a blanket will keep you just as warm and save a lot of gas. Many times we leave our unused appliances plugged in even when they are not in use. Although it's not as much, they are still drawing electricity. Unplug your toasters, can openers, coffee makers, hair dryers, phone chargers, computers, and all other electronics when they are not in use. The biggest change for us has been turning of TVs and lights when we are not in the room. Prior to Going Green we were accustomed to getting home from work and within minutes every light, TV and computer in the place was runnning... whether we were in that room and using that item or not. By simply turning off lights before leaving the room and shutting off the TV when not in use has saved on electricity immensely. Of course using a Compact Fluorescent lightbulb is the best way to save on your electricity even when lights are in use.

I have always been a big water drinker. In the past, we would go through at least one 24-pack of water per week. This created a lot of plastic waste and cost about $5-6 per week (if we got the water on sale). Now, I use a water filter and keep cold water in my refrigerator, I am drinking more water than ever, saving the waste created by the bottles, and will save the $286 per year that I was spending on bottled water.

Get Healthy
Going Green not only affects the environment, but it affects the body as well. Since Going Green I have made an effort to walk or ride my bike instead of driving whenever I can. I have also changed the way I shop, opting for organic foods and those with less packaging materials when possible. I also steer clear of bottled sodas, juices, snacks and other items with artificial sweeteners in them. I have focused my eating habits on fruits and vegetables.

Organic Cranberry Tea Spice Cake

Organic Cranberry Tea Spice Cake

Use as many organic ingredients you can find for optimum flavor.

1 1/2 cups organic unsalted butter, room temperature

3/4 cup plus 3 tablespoons sugar

2 large egg yolks

1 large egg

1/2 cup ground blanched almonds

1 tablespoon vanilla extract

1 cup fresh organic cranberries, coarsely chopped. Frozen cranberries will also work.

1 3/4 cups sifted unbleached all purpose flour

1 1/2 teaspoons pumpkin pie spice

1/2 cup dried organic cranberries

Powdered sugar

Preheat oven to 350 degrees

Using an electric mixer beat butter and 3/4 cup sugar in large bowl until fluffy. Add yolks and egg 1 at a time, beating after each addition. Beat in almonds and vanilla.

Mix cranberries and remaining 3 tablespoons sugar in small bowl. Let stand 5 minutes. Meanwhile combine flour and spice in medium bowl.

Stir fresh (or frozen) cranberries and dried cranberries into butter mixture. Add flour mixture and stir until well combined. Spoon batter into ungreased 7 inch tart pan with removable bottom. Smooth top with offset spatula. Bake until top of cake is golden and center of cake is firm, about 55 minutes. Transfer to rack and cool completely.

To serve, sift powdered sugar over top of cake. Remove rim from pan and transfer cake to platter.

Serves 6-8 people

Eating healthy is not only good for your family, but good for the environment as well. Follow these simple tips to "green" your kitchen and your cooking.

1- Choose your ingredients wisely. Try to purchase fresh, organic ingredients that have been produced locally. These products will allow you to eat healthy and decrease your carbon footprint. Local ingredients create a fraction of the transportation emissions as do those from various parts of the country... or the world. When purchasing your meat and fish ingredients, look for items that have been caught in the wild.

2- Purchase shares of your local farming community. In return, you will receive weekly deliveries of the freshest, organic produce raised right in your community.

3- In the kitchen, monitor your energy usage. Small portions such as cookies, dinner rolls and cupcakes can be baked in the toaster oven which uses a fraction of the energy used in your regular sized oven.

4- Plan meals in advance. When you go grocery shopping, only purchase fresh items that you will use that week. Otherwise, you might find that you are throwing away produce that has not been eaten in time. Another benefit of planning your meals is to reduce leftover waste. Cook only what you will eat, if you do end up with some food waste, create a compost pile in the backyard. The broken down food will feed the soil and your plants and reduce the waste that is sent to the landfill.

5- Purchase pantry items that come in recyclable containers. Glass and ceramic bottles can be re-used for flour, sugar, herbs, etc. If you can't re-use or re-purpose a container, make sure to recycle it curbside. Check with your local waste management for recycling guidelines in your town.

Be an Informed Shopper

Going Green does not mean you have to convert to wind energy or boycott traditional forms of transportation.

What it does mean though, is to educate yourself so that you can make informed decisions. When you go shopping, try to investigate the brands that you support. Many popular brands like Nike, Adidas, Levi's, Self Esteem, Liz Claiborne, Ralph Lauren, Quicksilver, and many more not only have taken steps to be more green in their operations, but they invest time and money into non-profit organizations that help our local communities and the environment. Some of these brands such as Quicksilver actually have their own organizations which are on the forefront of positive change.

Here are some other tips for informed shopping:

*Synthetic fibers such as acrylic and nylon contain plastics. Look for fabrics that use Rayon because this material is made with Cellulose which comes from plants.

*Some fabrics are treated with formaldehyde finishes to make them "No Iron" or "Stain Resistant". Wash your clothes before you wear them to wash off the excess chemicals and to avoid having them come into contact with your skin.

*Buy clothes that are made from Organic Cotton. Organic cotton growers do not use pesticides and the dyes they use are usually less toxic.

*Some brands offer clothing made with recycled fibers. Cotton blends and polyester are examples. Some sandals are also made from recycled materials.

*Look for items made from Bamboo. Bamboo is naturally anti-microbial. Growers do not need to treat the bamboo with chemicals to prevent the growth of bacteria. Also, bamboo is grown without pesticides and naturally replenishes.

I am so excited to see so many businesses, retailers, brands and individuals jumping on the Go Green Bandwagon... including Boscov's! While I was in college I had the opportunity to study the humpback whales in Maui and while I saw some of the most beautiful volcanoes, forests, beaches oceans and animals on my trip, there was a dark side. The environment was changing and the whales were struggling for survival due to global warming and the changes in ocean temperature. I came home from that trip with the knowledge of how much beauty there is in this world.... and how close we are to ruining it.

Three years later I am seeing real changes! People are starting to make choices that little by little are sure to make a positive impact on the environment. Businesses, manufacturers and individuals are doing things... some big and some small... but they are doing something and that is the first step!

Albright College Students Dress for Success!

On Tuesday, March 11 Boscov's joined Albright College to participate in their BYOB event. No... it was not a "Bring Your Own Beer" event... it was their 4th Annual "Bring Your Own Briefcase: an Evening of Interview Etiquette" event. Throughout the evening students enjoyed guest speakers and a fabulous dinner all helping to prepare themselves for the world after college.

Boscov's was proud to provide the clothing for the "Dress for Success Fashion Show". The theme of the fashion show was interview appropriate dressing. Below you will find some important tips to keep in mind for your next interview.

1- Make sure your clothes fit properly. Suit separates allow you to purchase a separate jacket and pant. Many of us are different sizes on the top and bottom and these make it very easy to find a matching jacket and dress pants in sizes that fit your body. Minor alterations may be necessary.

2- Stick with basic colors for your suit such as navy, black, brown or grey. If you choose to wear a colored dress shirt make sure it is subtle.

3- For the guys... if you want to wear a tie with a pattern try going with a great monochromatic look as you see on Austin. He is wearing a blue paisley Geoffrey Beene tie and dress shirt. The suit separates are by Billy London.

4- For the girls... When interviewing with some of the more conservative financial, accounting and banking companies stick with a classic skirt suit as shown on Jennifer.

Exercise is Fun! Really, it is!

Everyone knows that exercising regularly will give you more energy, but how often do you feel you have the energy to exercise? Let's face it, most of us would prefer to park ourselves on the sofa after a long day at work rather than go to the gym. It is truly a vicious cycle, but how can we bring it to an end? Why can't we just make ourselves exercise? Well, if you're anything like me, the thought of going to the gym and sweating in front of strangers under dreary flourescent lighting leaves a lot to be desired. So, you tell yourself, "I'll exercise at home!" but it's not easy to stay focused with all of the interruptions most of us have at home.

One key to making exercise a habit rather than an occasional event is to make it fun and entertaining. Whether you prefer to be indoors or out, if you can find a way to increase the "fun factor" of your workout it won't seem like exercise at all. (Remember running around the yard as a child pretending to be a superhero/cowboy/fairy princess? That didn't seem like exercise, did it?) Here are a few suggestions to help you have fun getting your exercise:

1.) Do something you enjoy doing. I know that sounds obvious, but if you like bird watching don't do it from your sofa, go for a hike in the park and take along your binoculars. Or, if you prefer TV watching, put a treadmill in your den and imagine you're trekking through the jungle while you watch "Lost".

2.) Instead of watching - participate! Golf, basketball, baseball or soccer...you don't have to be a pro to enjoy playing a sport. So you've got a 29 handicap? So what? You're burning calories while you walk the course as well as getting some fresh air. Even if you've never tried a sport, if you enjoy watching it, you just might enjoy playing it.

3.) Have fun with friends and family. Misery loves company - but so does fun! Get out and play catch with the kids, go for a walk with your girlfriends and catch up on gossip. Whatever you do, it's more fun with a friend.

On Saturday, February 16, 2008 Boscov's Oxford Valley store had the wonderful opportunity to have a visit by Marie Osmond. Marie spent the day signing her world famous collectable dolls.

People lined up early in the morning to get in line so they would be able to actually meet and talk to the famous singer, now dancer (Dancing With The Stars). Marie was everything you would think. She was very kind, personable and beautiful. She truly appreciates her fans and stayed an extra hour to make sure everyone in line had their dolls signed.

Boscov's also sold paper pin-ups for $1.00 at every register to benefit the Children’s Hospital of Philadelphia. Marie also signed many extra dolls which are available at the Oxford Valley store! Stop by the gift department to check them out. They are beautiful!

On Saturday, February 9, 2008 Boscov's held its From the Heart, Valentine's Day Event to benefit local heart health awareness organizations in all of our local communities. There were many activities for everyone in the family including blood pressure screenings, healthy food sampling, samples in the cosmetics department, and great activities for kids.

One of the most popular activities is a coloring station where kids of all ages could decorate a card for our troops. Boscov's works closely with the Keystone Soldiers, a non-profit organization that sends greeting cards and other items to our troops serving overseas. These cards will help ensure that every soldier has a Valentine this year!

Pink in the Rink A Huge Success!

On Friday, February 1, 2008 Boscov's and the Reading Royals Hockey Team came together to raise funds for the Breast Cancer Reasearch Foundation and Breast Cancer Support Services of Berks County at their first ever, Pink in the Rink hockey game.

Wearing pink jerseys and skating on a pink rink, the Royals led the way to victory, beating the Johnstown Chiefs 4-3. To read the full article about the game, click here.

It was a great game and a great cause! $5 of every ticket sold was donated to the Breast Cancer Research Foundation and Breast Cancer Support Services of Berks County. In addition to ticket sales there were sponsorships, raffles and an auction of the jerseys worn during the game.

The event was not only a victory for the Royals against the Chiefs... but it was a victory for Boscov's, the Royals and everyone who participated, in the continuing fight to find the cure for breast cancer.

When it comes to what I like to call "Bar Food"... and this Sunday what will be "Super Bowl Food" nachos, wings, burgers, chili, etc. all attempts at will power go out the window.

Believe it or not, there is in fact a way to save some calories and still indulge in all of your favorite Super Bowl Snacks all while enjoying the game, commercials and half-time debauchery.

Chili Dip... you will love it!

1 Package Neufchatel Cheese, 1/3 Less Fat than Cream Cheese
2 Cups Homemade Turkey Chili, or 1 can (15 oz) Hormel Turkey Chili
8 Oz. (One block) Low Fat Monterey Pepper Jack Cheese, grated

1- Evenly spread the Neufchatel Cheese in the bottom of a pie dish.
2- Spread the chili over the Neufchatel Cheese evenly.
3- Sprinkle the grated Monterey Pepper Jack Cheese over the chili.
4- Bake in a 375 degree oven for about 20-30 minutes or until the cheese is bubbly.
5- Allow to stand for about 10 minutes before serving to set.
6- Serve dip with tortilla chips.

Share your stories about your most memorable Valentine's Day! Was it the best? Worst? Most creative? Exciting?

My most memorable Valentine's Day was last year... my now fiance had an entire evening planned out for us at a really fancy restaurant. We lived about 30 minutes away from one another and I was supposed to go to his house after work and we were going to go out from there.

That day we had one of the worst and most dangerous snow storms of 2007! (As I'm sure many of you remember.) I certainly couldn't drive and thought our plans would be ruined. He would not allow that to happen, so he braved the elements and made it all the way from Philly to Reading that evening just so we could spend Valentine's Day together. On his way he stopped and got Chinese food and I set up my apartment with what I had around. We ended up having a very nice and romantic Valentine's Dinner.

It didn't matter what we did... but knowing that he would do anything just to make sure I had a great Valentine's Day said more than words, presents or dinners ever could.

Southwestern Fiesta

Chicken Chili & Chipotle Caesar

Ingredients
Soup:
1 tablespoon olive oil
4 boneless chicken breast halves - cubed
1 onion - chopped
1 1/4 cups low fat, low sodium chicken broth
1 4 oz. can diced green chiles
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried cilantro
1/8 teaspoon cayenne pepper
1 15 oz. can cannellini beans, drained and rinsed
2 green onions, chopped
2 oz. shredded low fat cheddar cheese

Salad
2 oz. romaine lettuce
4-6 cherry tomatoes, halved
1/4 cup frozen corn
1/2 avocado, sliced
2 tablespoons Parmesan cheese
2 tablespoons minced, canned Chipotle chiles
4 low fat tortilla chips, crumbled
Light balsamic vinegarette

Preparation
Soup: heat oil in a large saucepan over medium-high heat. Cook chicken and onion in oil 4 to 5 minutes, or until onion is tender and chicken is no longer pink.

Stir in the chicken broth, green chiles, garlic powder, cumin, oregano, cilantro, and cayenne pepper. Reduce heat and simmer for 15 minutes.

Stir in the beans and simmer for 5 more minutes. Place in teh top of the Soup and Salad and garnish with green onion and shredded cheese.

Salad: Toss vegetables and vinegarette and place in bottom container. Hold tortillas and parmesan cheese in a plastic baggie until lunch.

Fresh & Fit- Salad Shaker

As they say at Fit & Fresh, grill today, lunch tomorrow! This is great salad to use your leftover grilled steak from the weekend.

Ingredients
Left-over lean, grilled New York steak, sliced thinly
Crumbled blue cheese
Mixed greens
1/2-cup cherry tomatoes, halved
1/4-cup virgin olive oil
2 tablespoons balsamic vinegar
1/2-teaspoon fresh grated black pepper

Preparation
Fill Salad Shaker with mixed greens and tomatoes. Arrange 4-6 slices of steak on top and sprinkle with blue cheese to taste.

Whisk oil, vinegar and black pepper together. Store in the dressing cup until lunch.

Enjoy!

Martin Luther King, Jr.'s Birthday

Martin Luther King, Jr.'s interested expanded from civil rights to his criticism of the Vietnam War as well as the fight against poverty.

On April 4, 1968 Martin Luther King, Jr. was assassinated while standing on the balcony of Motel Lorraine in Memphis, Tennessee. Motel Lorraine has been a civil rights museum since 1991.

1. Apply your favorite moisturizer, in this case we are using Estee Lauder's Hydrabright moisturizer.
2. Use a light powder as an alternative to liquid foundation.
3. Use a soft shimmery bronzer on cheeks, nose and forehead to add a hint of color.
4. To soften your look add a loose shimmering powder along the cheekbones.
5. Before applying eyeshadow, use an eyeshadow base to avoid smudging, creasing and to keep shadow on longer.
6. Apply neutral shadow while base is still damp.

To help you create a breakfast fit for a queen, we went to the ones who do breakfast best... our friends at T-Fal. Try these delicious breakfast menu items to give Mom the love and attention she needs to start the day off right!

Chocolate & Cherry Pancakes

Ingredients

2 cups all-purpose flour
1/3 cup sugar
4 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup dried cherries
2/3 cup semisweet chocolate chips
2 large eggs, beaten
4 tablespoons butter, melted
1 ¾ cups milk

1. Sift together flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
2. Add cherries and chocolate chips.
3. Combine eggs and melted butter in a mixing bowl. Stir well until well blended. Add pancake mix and stir until dry ingredients are moistened.
4. Heat a the Family Griddle pan or large skillet over medium heat.
5. Pour batter onto hot griddle ¼ cup at a time. Cook pancakes until golden on both sides.

Makes 6 servings.

Apple Fritters

Ingredients

2 quarts of vegetable oil for frying
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon ground nutmeg
1 teaspoon salt
2 eggs
1 cup milk
4 large baking apples, peeled and cored, and sliced into 1/2-inch rings
Confectioners' sugar for dusting .

1. Fill deep T-Fal Maxi Fryer bowl to MAXI with oil. Preheat fryer to 374 degrees F or to when the red temperature-ready light turns off.
2. In a medium-sized mixing bowl, beat together the flour, sugar, baking powder, nutmeg and salt. In a separate bowl, beat together eggs and milk. Stir milk mixture into flour mixture until smooth.
3. Dip apple slices in batter. With frying basket in the down position, drop battered covered apple rings batter into the hot oil, three to four at a time. Do not over crowd. Close lid. Deep fry 2 to 2 1/2 minutes, or until golden brown. Turn over and cook an additional minute.
4. Raise basket. Open lid. Remove apple fritters. Drain on paper towels. Can be kept warm and crisp in a 200 degree F oven for up to 30 minutes. Dust with confectioners’ sugar before serving.

Makes about 24 fritters.

Beware of Holiday Scammers!

Hi All,

Just a little bit of information I wanted to share... this weekend while working on one of our stores some people showed up claiming that they were from Toys for Tots. They were selling toy packages for $40 and $60 which would be donated and the profits turned back in to buy more toys. This seemed fishy to me and after further investigation we found out they were scammers!

If you see anyone that says they are from Toys for Tots and they are trying to sell you toys or collect money from you... please be aware that they are probably scammers.

Toys for Tots is a fabulous organization that collects toys for children each holiday season. Please do not be afraid to donate items to them as they provide Holiday gifts for needy children who might otherwise not receive any... just be aware and before you give money to any organization make sure they are from the organization that they say they are from.

Some Helpful Hints to Avoid Being Scammed:

Chat about the organization. Most volunteers or those who work for non-profit organizations are passionate about their cause. It may be a red flag if you find that the person is not interested in discussing the cause, how they got involved or what is being done with your donations.

Ask for a Business Card. People who work for non-profits will most likely have a business card to give you. If not, ask for a brochure, website or other information.

Ask for Contact Information for your local chapter and the name of the volunteer's supervisor.

If you are in a store, check with the store's PR Manager or Store Manager and make sure that the organization is on their schedule.

If the organization is collecting money- DO NOT GIVE CASH!!! Write a check to the organization and on the back write "For Deposit Only". This will ensure that the check is deposited into the organization's account.

Gingered Pear Upside-Down Cake
Topping:
1/2 cup packed brown sugar
1/4 cup butter or margarine
1 T. light corn syrup
1 T. finely chopped crystallized ginger
1 large ripe pear

Cake:
1 cup granulated sugar
1/2 cup shortening
1 t. vanilla
2 eggs
1 1/2 cups all-purpose flour
1/2 cup low-fat milk
1 T. finely chopped crystallized ginger
1 1/2 t. baking powder
1/2 t. nutmeg
1/4 t. salt

To Make Topping:
Combine brown sugar, butter and corn syrup in a small saucepan. Cook and stir over medium-low heat for 3 to 5 minutes, or until smooth. Pour evenly into 9" round or square cake pan that has been sprayed with non-stick cooking spray. Sprinkle evenly with chopped ginger, set aside.

To Make Cake:
Place granulated sugar, shortening and vanilla in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 2 and mix about 45 seconds. Continuing on Speed 2, add eggs and mix about 45 seconds longer. Continuing on Speed 2, add remaining cake ingredients and mix about 30 seconds. Stop and scrape bowl. Turn to Speed 6 and beat about 1 minute.

Peel, core and slice pear. Arrange pear slices evenly over sugar mixture in pan. Spread batter evenly over pear slices. Bake at 350 degrees F. for 45 to 55 minutes, or until center springs back when touched lightly. Let stand in pan about 3 minutes. Invert onto serving plate.

Serve warm or at room tempurature. Yield: 8

Good Eats Roast Turkey

Episode: Romancing the Bird (A Good Eats Thanksgiving)

1 (14 to 16 pound) frozen young turkey

For the brine:
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1/2 tablespoon allspice berries
1/2 tablespoon candied ginger
1 gallon iced water

For the aromatics:
1 red apple, sliced
1/2 onion, sliced
1 cinnamon stick
1 cup water
4 sprigs rosemary
6 leaves sage
Canola oil

Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like basement or garage) for 6 hours. Turn turkey over once, half way through brining.

A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.

Remove bird from brine and rinse inside and out with cold water. Discard brine.

Place bird on roasting rack inside wide, low pan and tap dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other natural) oil.

Roast on lowest level of oven at 500 degrees farenheit for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees farenheit. Set thermometer alarm if available to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.
